Easy Slimming Chinese Lemon Chicken

This simply slimming recipe for Chinese Lemon Chicken is a great substitute for a takeaway and is completely syn-free which means that it is a great way to stay on track if you are following Slimming World.

Are you following a healthy life plan such as Slimming World? Do you miss takeaways? How about a lovely Chinese meal? Well, this Chinese Lemon Chicken recipe is not only quick, easy and completely healthy but it tastes amazing too!

The sauce is made from – believe it or not – no-added sugar lemon squash. Whilst, at first, it might put you off, it really does work with the Chinese 5 spice and the dark soy to give a rich, slightly sweet flavour. The kind you would get from a takeaway.

HOW TO MAKE Easy Chinese Lemon Chicken

INGREDIENTS (SERVES 3)

  • 3 chicken breasts, chopped into bite-sized pieces
  • 3 carrots cut into batons
  • 1 head of broccoli cut into smaller pieces
  • 1 onion, chopped
  • 150ml sugar free lemon squash
  • 200ml chicken stock
  • 1 tsp chinese 5 spice
  • 1 tsp easy garlic
  • 1 tsp easy ginger
  • 1/4 tsp chilli flakes
  • 2 tbsp dark soy
  • Black pepper

METHOD

Spray a large non-stick pan or wok with frylight, add the onions and soften, then add the chicken to brown. Add the carrots and broccoli and cook for around 5 minutes until slightly soft. Mix together the rest of the ingredients and add to the pan. Bring to the boil and then turn down the heat to simmer. Cook for around 15 minutes or until the sauce has started to reduce to form a slightly sticky consistency. Serve with instant egg noodles.

Instructions

  • Mix together the rest of the ingredients and add to the pan.
  • Bring to the boil and then turn down the heat to simmer. Cook for around 15 minutes or until the sauce has started to reduce to form a slightly sticky consistency.
  • Serve with instant egg noodles or rice.
