4 Slimming World Pancake Recipes

Slimming World Pancakes with bacon, maple syrup and blueberries

One of our favourite breakfasts since I started Slimming World is pancakes. Whether we have them with bacon and a bit of maple syrup or some fruit, they are a definite hit!

On a number of occasions, I have been caught out when trying to decide on a breakfast which is fairly quick and easy. If you have some porridge oats, milk and eggs then you can safely say that you have a Slimming World breakfast on your hands. Even better if you have some fruit – frozen or otherwise – to add to it!

Mueller Light Yoghurts are a great way to either add flavour on top of a pancake or to add into the actual batter mix itself. They even have plenty of limited edition flavours – my favourite at the moment is Hot Cross Bun flavour (must try that one in a pancake!).

The one kitchen gadget which I would never be without now is our Severin Crepe Maker. It is brilliant for making omelettes and, of course, pancakes. It means that things cook through properly, you don’t have to use any oil AND nothing sticks! Less cleaning as a result too – which makes everyone in this house happy!


With all of this in mind, I thought I would share 5 different recipes I have learnt about since becoming a Slimming World member and then a Slimming World Consultant.

Slimming world pancakes – 5 ways

Banana Pancakes

A really easy way to get your fill of protein and still enjoy pancakes, 'omelette style'!
Prep Time5 minutes
Cook Time5 minutes
Servings: 1 person

Equipment

  • A crepe maker – if you have one!

Ingredients

  • 1 Banana (slightly ripe or more is better!)
  • 2 Eggs

Instructions

  • Mash the banana and mix in the two eggs
  • Spray a frying pan with frylight and place over a medium heat. Pour the mixture in and cook until slightly set. Turn over and cook the other side. (If you are using a crepe maker, then there is no need for any oil).
  • Serve and enjoy!

Slimming world pancake mix 2

Healthy Extra B Pancakes

An easy pancake mix using porridge oats which counts as your HEB. Syns – 1 for all 8 pancakes plus 2 syns per level tbsp of maple syrup
Prep Time5 minutes
Cook Time10 minutes
Servings: 2 people – 4 pancakes each

Ingredients

  • 80 g Porridge Oats (preferably blitzed in a blender to make them smooth)
  • 150 ml Skimmed Milk
  • 3 Eggs
  • 2 tbsp Granulated Sweetner
  • 2 tsp Vanilla Essence
  • 4 Bacon Medallions
  • 1 level tbsp Maple Syrup
  • 2 Handfuls Blueberries

Instructions

  • Mix all the ingredients together
  • Make the pancakes the usual way using a saucepan or crepe maker
  • Grill the bacon medallions and add with the pancakes, add in the blueberries and top with a level tbsp of maple syrup

Overnight Oats Pancakes

A tasty way to cook a slightly different style of Slimming World pancakes. Syns – half for the Mueller Light Yoghurt, half for the granulated sweetener
Prep Time12 hours
Cook Time5 minutes
Servings: 1 person

Ingredients

  • 1 x 160 g Pot of Mueller Light Yoghurt in a flavour of your choice
  • 40 g Porridge Oats
  • 2 Eggs
  • 1 tbsp (level) of Granulated Sweetner

Instructions

  • Mix the oats with the yoghurt and leave in the fridge overnight
  • The next morning, mix the eggs and sweetner into the yoghurt and oat mixture
  • Cook each side for around 2 – 3 minutes in either a frying pan or on a crepe maker
  • Serve with fruit or on their own and enjoy!

American-Style Pancakes

Light and fluffy pancakes. Half a syn for the sweetner and half a syn for the baking powder plus HEB for the porridge oats
Prep Time15 minutes
Cook Time10 minutes
Servings: 1 person

Ingredients

  • 40 g Porridge Oats
  • 2 Eggs
  • 3 tbsp Fat Free Greek Yoghurt
  • 1 level tbsp Granulated Sweetener
  • 2 tsp Vanilla Essence
  • 1 level tsp Baking Powder

Instructions

  • Blitz the oats using a blender until they are a fine powder, then mix with 1 egg, the yoghurt, vanilla essence, baking powder and sweetener until smooth
  • Whisk in the remaining egg and leave to rest for 10 minutes
  • Place a saucepan over a low heat and spray with low calorie cooking spray then spoon in your pancake batter – around two and half tablespoons per pancake.
  • Cook on each side for around 3-4 minutes. Serve with your favourite fruit.
