Dairy Free Peanut Butter Fudge #SwearByIt

Ever since Vita Coco sent me a tub of their oil a couple of years ago, I have been hooked. I now use this oil for pretty much everything – especially since finding out you shouldn’t heat olive oil to a high temperature!

Coconut oil has so many fantastic uses; a face moisturiser, in place of butter on your toast, to cook with – in both savoury and sweet recipes and now I regularly use it to cook anything from scrambled eggs to roast potatoes.

When I saw that Vita Coco were challenging bloggers to get creative and come up with an original recipe using their coconut oil, I couldn’t pass up the chance. I wanted to come up with something gluten free, dairy free and refined sugar free – and this is it! Melt-in-the-mouth, dairy free, gluten free and refined sugar free peanut butter fudge.

  3. I’m a fan of anything peanut butter and I love using coconut oil, that and coconut flour and coconut sugar (addicted much). I’ll definitely be trying out this recipe, seems a little bit naughty but a much healthier version, think I’d just switch the cocoa powder for cacao instead 🙂
