Christmas with a Summer Twist: Turkey, Bacon and Brie Salad with Cranberry Dressing

Yep. I said it. The ‘C’ word. Funnily enough as I was driving Ross to the station this week in the early morning sunshine, he noticed the dew on the ground and the mornings get colder. Then he uttered those words ‘It’ll be Christmas soon’! 

In timely fashion, I was challenged by Stocking Fillers to come up with a recipe that puts a summer spin on a traditional Christmas fayre. They are then going to use my recipe, along with submissions from other bloggers, to create a 12-day advent calendar, which will feature all the creations.

There is no reason why we can’t bring a little piece of Christmas to the summer, is there? And what better way to do that than through our stomachs with a twist on a traditional Christmas meal. One of my utter favourites is turkey with cranberry sauce, accompanied by pigs in blankets. But with all the hot warm weather, I don’t really want to be eating a full on roast. 

So, I have come up with a turkey, bacon and brie salad with a cranberry dressing. What’s more, I have also made sure that this is both gluten and sugar free.

For the Salad

2 Slices Chopped Turkey
2 Slices Cooked Chopped Streaky Bacon
2 Slices Chopped Brie
2 Tbsp Olive Oil
Handful Fresh Basil
Mixed Lettuce Leaves
Cherry Tomatoes

How to Prepare

Combine the olive oil, herbs and lettuce leaves. Arrange on a plate then place the turkey, bacon and brie on top, accompanied by the avocado and tomatoes.

For the Cranberry Dressing

1 cup cranberry juice
1/2 cup of cranberries – either fresh or frozen
1 Tbsp Olive Oil
1 Tbsp Cider Vinegar
1 Tbsp Honey
2 tsp Minced Chives
Salt and Pepper

How to prepare

Place juice and cranberries in small pan and bring to the boil. Cook until reduced to a quarter of a cup (around 5 minutes). Combine cranberry mixture with remaining ingredients in a small bowl and whisk. Drizzle over the salad (best when warm).

So, there you have it. My take on Christmas in July – without the full on mess that a roast dinner can cause and without the last minute present buying!

    Great to see I am in good company in creating a Christmas recipe with a summer twist! I have just perfected mine…nectarine, summer berry and amaretto mincepies with a almond marzipan crust…no added sugar, grains or starches so even I can eat them and boy are they good! I’ve eaten too many!!!! I’ll be posting that recipe later this week. In the meantime I am drooling over yours!!!
