Ever since Vita Coco sent me a tub of their oil a couple of years ago, I have been hooked. I now use this oil for pretty much everything – especially since finding out you shouldn’t heat olive oil to a high temperature!
Coconut oil has so many fantastic uses; a face moisturiser, in place of butter on your toast, to cook with – in both savoury and sweet recipes and now I regularly use it to cook anything from scrambled eggs to roast potatoes.
When I saw that Vita Coco were challenging bloggers to get creative and come up with an original recipe using their coconut oil, I couldn’t pass up the chance. I wanted to come up with something gluten free, dairy free and refined sugar free – and this is it!
