Free-From Chocolate Topped Doughnut Cakes

Following on from last week’s Free-From Chocolate Walnut Brownies, I though I would share another free-from recipe with you.

These were a BIG hit with me and my family and I have to say that once you have had one, you want another. Much lighter than your usual everyday stodgy doughnut, there a much healthier alternative being free from sugar and gluten and are paleo-friendly, oh, and around 135 calories each.

Ingredients
  1. 1 1/4 cups of ground almonds
  2. 1/4 tsp of salt
  3. 1/4 tsp of baking powder
  4. 3 eggs
  5. 2 tbsp honey
  6. 1/4 cup coconut oil
  7. 1/2 tsp vanilla extract
For the topping
  1. 6 squares of Cavalier Dark Chocolate with no added sugar
Instructions
  1. Place all the ingredients in a bowl and whisk
  2. Pour equally into large silicone cup cake moulds
  3. Bake for 15 minutes at 180Β°C or gas mark 7
  4. Leave to cool
  5. Place chocolate in a bowl and melt in the microwave for about a minute
  6. Spread over the tops of the cakes and place in the fridge to set

    These look utterly delicious!!! I saw them earlier in the week and didn’t get a chance to comment. Well done you. I could scoff a whole load of those right this minute!!!

    135 calories! Genius. The only problem is I might eat them all so that would defeat the purpose. They look lovely
