A really simple Key Lime Pie - no baking involved!

For the base
  1. 300g Digestive Biscuits
  2. 75 g Butter (unsalted)
For the filling
  1. The zest of 5 Limes
  2. The juice of 5 Limes
  3. 400g Condensed Milk
  4. 300ml Double Cream
  5. Silver Spoon Chocolate Letters and Numbers
To make the base
  1. Place the biscuits in a plastic bag and crush them with a rolling pin
  2. Melt the butter in a pan and stir in the crushed biscuits
  3. Press the mixture into a loose based, greased flan tin and press in well with the back of a spoon
  4. Place in the fridge to set
To make the filling
  1. Zest the 5 limes and set the zest to one side
  2. Squeeze all the juice into a mixing bowl and add the condensed milk and cream.
  3. Whisk until thickened
  4. Add three quarters of the zest and stir into the mixture
  5. Spoon the mixture onto the chilled base and place in the fridge for one hour to set
  6. Decorate the pie with the chocolate letters and the rest of the lime zest
  1. Total cost per portion - based on shopping at Morrisons - 58 pence.
