My 3 Favourite Mindful Chef Recipes

You may recall a few weeks ago that I reviewed a recipe box delivery service from Mindful Chef. Their ingredients are organic and measured carefully to provide you with exact portions in order to make the recipes using the cards provided with your produce. An added bonus is that all their recipes are dairy and gluten free and there are also vegetarian options meaning that they are designed to suit the whole family.

Since my first box, I have had the opportunity to experience their ordering process and, having recently updated their website, Mindful Chef has improved the process. You can log in and select your recipes for your box by Thursday lunch time ready for delivery on the following Sunday or Monday (depending on where you live in the UK).

I thought I would share with you my three very favourite recipes so far:

I have always been a big lover of fish dishes and, like most households we tend to only cook the standard haddock, cod and salmon. I usually order different types of fish when we visit a restaurant so I was really pleased to see that sea bass was included in this particular recipe. 

Very much like music, it’s funny what memories food can create. This dish contains capers and I love them. They remind me of when I first went to tea with my best friend, Hannah, way back when I was 7 years old. Her mum served them and I was surprised as I had never tasted them before and have loved them ever since. 

This recipe took 25 minutes to cook and contains 544 calories per portion.

There are two ingredients in this dish that I rarely or have never cooked with – or even think of using. Aubergines are mainly reserved for moussakas for me so I was interested to see how they would feature in this dish. The other ingredient is millet – something I thought was only reserved for the birds. Having used it in the sea bass recipe and seeing it here again, I have to say that it has quickly become one of my favourite replacements for rice.

This recipe takes 30 minutes and contains 497 calories per portion.

Huevos Rancheros with Pulled Chicken and Sweet Potato Hash

This recipe contains three of my favourite things – avocado, chicken and sweet potato – and the combination of these and the other ingredients is delicious. To me it was a cross between a salad and a type of bake as it was both hot and cold in places. It really worked though!

This recipe takes 30 minutes to cook and contains 628 calories per portion.
